If you haven't eaten radishes, you definitely should. (And my favorite radish recipe)
Radishes are an undervalued root vegetable. Lets face it, those poor little radishes are always left on the veggie tray. I'll be honest, I had never eaten one until we started growing them, and we started growing them because they are absolutely beautiful! Once we started selling them we noticed that not may people eat them, but those that did RAVED about how good ours tasted. So I started researching radishes, and found out that they are rich in antioxidants and minerals, like calcium and potassium (both excellent for lowering blood pressure), and full of natural nitrates...they are one of the best foods for you! They can be eaten raw, shredded and added to salads or tacos, roasted, grilled...the list goes on and on. If you're like me, your schedule is packed, so here is my favorite quick and easy radish recipe.
Grilled Radishes
Ingredients:
Radishes
2 Tbsp butter
Garlic powder, salt, and pepper to taste
Ice cube
-Heat grill to high heat
-Remove radish tops and wash them, no need to dry.
-Thinly slice your desired amount of radishes
-Get a piece of aluminum foil large enough to double layer, and make a pouch
-Add all ingredients to foil pouch and seal. Place on grill for approximately 20 minutes, or until radishes are soft.
